Filter out "junk" bytes every other byte?

I have a file that has (in some parts of it) an empty (00) byte every other byte, so for example: 20 00 56 00 65 00 72 00 74 00 turns into . V.e.r.t. It's making it a little irritating to edit the file. Is there a way for me to hide these bytes somehow so they don't appear in HxD?

What you mentioned is Unicode text encoded as UTF-16. For some characterss those "empty" bytes will be different from 00.

When the next version of HxD comes out with the datainspector some datatypes can be interpreted (like this Unicode string) and presented in a separate text box for easier editing.
Until then though, there is no way to "hide" those bytes.
